Ingredients

  • 200 g pasta your choice
  • 1 cup cherry tomatoes halved
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 onion chopped
  • 4 cups vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach fresh
  • Parmesan cheese for serving

Instructions

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion and garlic; sauté until translucent.
  • Stir in the diced bell pepper and halved cherry tomatoes; cook for 3-4 minutes.
  • Add the dry pasta to the pot, followed by the vegetable broth.
  • Sprinkle in the Italian seasoning, salt, and pepper; stir well.
  • Bring the mixture to a boil, then reduce heat and cover.
  • Simmer for about 10-12 minutes, or until pasta is al dente.
  • Add the fresh spinach and stir until wilted.
  • Taste and adjust seasoning if necessary.
  • Serve hot, topped with grated Parmesan cheese.
