Ingredients

  • 2 pork chops or chicken breasts
  • Salt and pepper to taste
  • 1 cup flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 1 onion chopped
  • 2 carrots sliced
  • 1 potato diced
  • 2 tablespoons curry powder
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • Cooked rice for serving

Instructions

  • Season the pork chops or chicken breasts with salt and pepper.
  • Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  • Dredge the meat in flour, dip in egg, and coat with panko.
  • Heat vegetable oil in a pan over medium heat.
  • Fry the breaded meat until golden brown on both sides, about 4-5 minutes per side.
  • Remove and drain on paper towels.
  • In another pot, sauté the chopped onion until translucent.
  • Add the carrots and potato, cooking for another 5 minutes.
  • Stir in curry powder and cook for 1 minute.
  • Pour in the broth and soy sauce, simmer for 20 minutes.
  • Slice the katsu and serve over rice, topped with curry sauce.
