Ingredients

  • 1 box cornbread mix
  • 1 can black beans drained and rinsed
  • 1 cup cooked ground beef or turkey
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Monterey Jack
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • 2 eggs
  • 1/2 cup milk

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine cornbread mix, eggs, and milk. Mix until just combined.
  • In a separate bowl, combine black beans, ground meat, corn, diced tomatoes, bell peppers, and onions.
  • Layer half of the cornbread mixture into a greased baking dish.
  • Spread the meat and vegetable mixture evenly over the cornbread layer.
  • Pour the remaining cornbread mixture over the top.
  • Sprinkle shredded cheese on top of the casserole.
  • Bake in the preheated oven for 30-35 minutes or until golden brown.
  • Allow to cool for 5-10 minutes before serving.
  • Garnish with fresh herbs if desired.
