Marinate the chicken pieces in red wine for at least 2 hours or overnight.
Remove the chicken from the marinade, pat dry, and season with salt and pepper.
In a large Dutch oven, cook the diced bacon until crispy, then set aside.
In the same pot, add olive oil and brown the chicken pieces on all sides.
Remove the chicken and sauté the onions and garlic until translucent.
Stir in the tomato paste and cook for another minute.
Add the mushrooms and cook for about 5 minutes until they soften.
Return the chicken and bacon to the pot, pouring in the marinade and chicken broth.
Add thyme, bay leaves, and season to taste.
Cover and simmer on low heat for about 1 hour, until the chicken is tender.
