Ingredients

  • 1 whole chicken cut into pieces
  • 2 cups red wine Burgundy recommended
  • 1 cup chicken broth
  • 4 oz bacon diced
  • 2 cups mushrooms quartered
  • 2 medium onions chopped
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 sprigs thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  • Marinate the chicken pieces in red wine for at least 2 hours or overnight.
  • Remove the chicken from the marinade, pat dry, and season with salt and pepper.
  • In a large Dutch oven, cook the diced bacon until crispy, then set aside.
  • In the same pot, add olive oil and brown the chicken pieces on all sides.
  • Remove the chicken and sauté the onions and garlic until translucent.
  • Stir in the tomato paste and cook for another minute.
  • Add the mushrooms and cook for about 5 minutes until they soften.
  • Return the chicken and bacon to the pot, pouring in the marinade and chicken broth.
  • Add thyme, bay leaves, and season to taste.
  • Cover and simmer on low heat for about 1 hour, until the chicken is tender.
